Ingredients

  • 1 1/2 (pound) ground beef
  • 1 (15.0 ounce) can stewed tomatoes
  • 1 (8.0 ounce can) tomato sauce
  • 2 (cup) water
  • 1 (1.0 ounce envelope) dry onion soup mix
  • 1 (teaspoon) sugar
  • 1 (16.0 ounce package) frozen mixed vegetables

Directions

  1. In a large pot, brown beef and drain well. Add all other ingredients and bring to a boil. Reduce heat. Cover and simmer 20 minutes.

    Made this for lunch b/c i had ground turkey to cook. SO GOOD! The ground turkey worked well, I didn't have onion soup mix, so I used dehydrated onion, chicken broth and a little celery salt. Served with toasted french bread. A keeper!

  • Its fine I made it tonight with carrot fries, I just used the onion seasoning in moderation, and used maple sausage and vodka tomato sauce. It was awesome.

    @Anonymous, the high sodium content is based upon the bouillon which is an ingredient in dry onion soup mix. If you are watching your sodium intake and want to avoid the excessive sodium inherent in pre-packaged "mixes" then here's your solution for this recipe: INGREDIENTS: 1/2 onion, minced; 1 cup beef broth or beef stock; 3 stalks celery, minced; 1/4 t. sugar; salt and pepper, to taste. DIRECTIONS: Sweat onions over medium-high heat for 3-4 minutes. Add remaining ingredients and simmer for 15 minutes. Add it to the soup.

    Chef Leslie, the bouillon doesn't explain everything! There can't be 2000 calories in a single serving of this soup. You've explained the sodium but not the calories.

    Hi Andreas! For this recipe I suggest a general mixed vegetable blend (peas, carrots, corn, green beans, etc.); however, if you prefer a different variety of vegetables then you could certainly use what you prefer. As far as brands, for the most part all frozen vegetables are the same. The blend of vegetables may vary slightly, as well as price, packaging (sold in steam-able bags, boxes, etc.) and added ingredients such as seasonings and sauces; are all things that separate one brand from another.
