Ingredients

  • 1 (pound) fresh asparagus
  • 1 (2.0 ounce jar) diced pimento, drained
  • 2 (tablespoon) lemon juice
  • 1 (tablespoon) butter, melted
  • 1/4 (teaspoon) dried thyme
  • 1/8 (teaspoon) garlic powder
  • 1/8 (teaspoon) pepper
  • 6 (fillet) tilapia
  • Vegetable cooking spray

Directions

  1. Clean and chop asparagus. Combine with next 6 ingredients. Arrange fish in 13 x 9 x 2 dish coated with spray. Spoon mixture over. Bake at 350 degrees for 20 minutes. Serves 6.

    Enjoyed it, though I seasoned the fish with salt, pepper, and old bay and used minced garlic instead of garlic powder

    The fish was delicious, but the asparagus was still hard and crunchy and no one would eat it:( Next time I think I will steam or roast the asparagus by itself and skip trying to bake it with the fish.
