Cream of Potato-Bratwurst Soup

Ingredients

  • 1 (package) bratwursts
  • 2 (cup) water
  • 2 (large) carrots, chopped
  • 1/4 (large) onion, chopped
  • 1 (10.75 ounce can) condensed cream of potato soup
  • 2 (cup) milk

Directions

  1. Place the bratwursts and water into a large skillet, and set over medium heat. Bring to a boil, then cover and simmer for 10 minutes. Turn brats, and add more water if needed. Add carrots to the water. Cover and simmer for 10 more minutes. Drain, and slice the bratwurst.
  2. While the bratwurst is cooking, pour the milk and potato soup into a saucepan, and set over medium heat. Simmer until the bratwurst are cooked. Once cooked, stir in the bratwurst, as well as the onions and carrots. Cook, stirring occasionally for an additional 10 minutes.

    So yummy! Next time though I think I want to add some cream or half & half to make it thicker, more like a chowder then a soup. I also added a can of corn to this. SO good! It was a hit!

    @Michele~ Hi this is Chef Heather from Food on the Table. Adding some cream or half and half would make it a creamier soup. You could also make it thicker by making a roux made from melted butter and flour and stirring that in or try adding in a can of creamed corn. The creamed corn will add flavor and thicken this soup at the same time!

    @Anonymous- For this recipe creamed tofu or soy cream would work best as a substitute for the milk and condensed cream soup (to best make your soup rich and creamy). Soy milk would also work if you like a thinner soup. To add the flavor of the potatoes use diced fresh potatoes and boil for 10-15 minutes until tender,

    @Anonymous- Here at Food on the Table we strive to carefully proof read, test, and edit our recipes before making them public to the users. But even after checking and double checking sometimes typos still get through or directions may seem unclear. As for this recipe, where the ingredients say 1 bratwurst it is referring to one package of bratwurst. There are several brands of bratwurst/smoked sausage that are sold as one large sausage link to a single package instead of say 4 small links. To be clearer I have edited this to specifically say 1 package bratwurst. Regarding your questions with the 2 cups of milk and 2 cups of water, the directions say to braise/simmer the bratwurst in the water and then remove them from the water once cooked. The milk is combined with the condensed soup in a separate saucepan to form the actual soup. Hope this helps to clarify things for you.     You could also add 1 russet potato, peeled and diced, when you add the carrots. It would be more like a chowder.

    this was very good, could use a bit of seasoning though. the bratwurst adds a lot of flavor, but the broth part needed a little something to take it to the next level. It was way better the next day, after all if the flavors had time to mingle.

    Anonymous- To add more flavor to this soup I recommend adding some cheddar cheese, fresh parsley or thyme, celery salt or seasoned salt, black or white pepper, dried mustard powdered, fresh garlic, or celery. Also Chef Leslie had a great suggestion of adding a fresh potato which will add extra flavor and texture to this soup.

    I made this soup and the whole family loved it. I added 2 stalks of celery finely chopped, it added just enough color to the pot. Next time I make it I think I will add potato finely chopped as well for a little more potato taste and as a thickener to the soup. We like our soups with a little less brothy,

    I made this for dinner tonight, using all of the recommendations found in this comment section: (1) can of corn, (2) two stalks of celery, and (1) potato and added them at the same time as the carrots. I also used (3) Cajun Andouille instead of the bratwursts. It came out thick, just a little spicy, and delicious. Thanks!

    Why add a can of condensed soup when potato soup is SO easy to make? 1 lb of potatoes, peeled and cubed
    2 c chicken broth
    2 medium green onions, with tops
    1 1/2 c half and half (I used fat free)
    Dash of dried thyme leaves
    Salt and pepper to taste

    Just happened upon this thread again, and for those who like the idea of adding corn, can I suggest an alternative to using canned creamed corn? If you take an ear or two of fresh corn and cut the kernels from the cob, and then really scrape the corn milk from the cob as well, the starch will help the thickening process and will also add a lot of flavor. I always do this with my corn chowder.
