Autumn Glazed Pork Chops

Ingredients

  • 4 (3/4-inch thick) boneless pork chops
  • 1/4 (teaspoon) freshly ground pepper
  • 1/4 (cup) apple cider or juice
  • 1/2 (cup) whole berry cranberry sauce
  • 2 (tablespoon) honey
  • 2 (tablespoon) frozen orange juice concentrate
  • 1/4 (teaspoon) ground ginger
  • cooking spray

Directions

  1. Spray a large nonstick skillet with cooking spray and heat on medium-high. Sprinkle both sides of chops with pepper.
  2. Brown chops on each side in hot skillet, about 3 minutes per side. Add apple cider.
  3. Cover tightly and reduce heat. Cook over low heat for 5-6 minutes.
  4. Mix cranberry sauce, honey, frozen orange juice concentrate, and ginger in a bowl and pour over pork chops. Simmer without a lid until chops are done and the sauce is warm and thickened.

    Do I add 2 tablespoons just frozen concentrate or am I adding 2 tablespoons of orange uice. The juice is not in the directions...

    good question - i would add 1, and then check consistency - if too thick, add water, if it looks and tastes right, then another tbsp of concentrate...hope that helps

    @Katie- Hi this is Chef Heather from Food on the Table. Thank you for pointing out the typo in the directions. The orange juice should be added at the same time as the cranberry juice and honey. I have modified the directions, which now show this revision. Also to add the maximum flavor use the frozen orange juice concentrate. However, if all you have available is orange juice or fresh oranges that would work too. If using these other options I would recommend adding some of the fresh orange zest or a little bit more juice to achieve more of that orange flavor.

    I haven't made this yet, but I'm thinking that since pork chops always go well with applesauce, you could even substitute applesauce for the cider/juice and add a different texture :)

    I made this tonight and loved it. The sauce thickened up nicely and the cranberries added just a bit of tartness to the sweet of the other ingredients in the sauce. Wonderful.

    Ok....well we didn't love it. My family usually really goes for sweet/savory combos and this was just waaaay too sweet. I might try and morph it somehow but we couldn't even taste the meat.

    Wow. Better than I could have imagined and my family could not get over the delicious meal! I used a bit less honey, added a splash of sherry to deglaze the pan, and some rosemary and red pepper flakes- just a dash.

    Hi Susan! Are you asking about an option for the comments to show when you print the recipe? Currently this is not an option when you click the 'print' button at the top of the recipe. However, you could always highlight the comments, recipe and ingredients and paste into a word document and print from there. You can also view the comments on the Food on the Table phone app, that way you can see the comments with the recipe if you are out at the store or cooking from your phone at home.
