Chicken Quesadillas

Ingredients

  • 2 (8.0 ounce fillet) skinless, boneless chicken breast, diced
  • 1 (tablespoon) fajita seasoning
  • 1 (tablespoon) vegetable oil
  • 1 (whole) green bell peppers, chopped
  • 1 (whole) onion, chopped
  • 4 flour tortillas
  • 1 1/2 (cup) blended Mexican cheese

Directions

  1. Preheat the broiler. Grease a baking sheet.
  2. Toss the chicken with the fajita seasoning, then spread onto the baking sheet. Place under the broiler and cook until the chicken pieces are no longer pink in the center, about 5 minutes. Chop chicken.
  3. Preheat oven to 350 degrees F (175 degrees C).
  4. Heat the oil in a large saucepan over medium heat. Stir in the green bell pepper, onion, and chicken. Cook and stir until the vegetables have softened, about 10 minutes.
  5. Layer half of each tortilla with the chicken and vegetable mixture, then sprinkle with the cheese. Fold the tortillas in half and place onto a baking sheet.
  6. Bake quesadillas in the preheated oven until the cheeses have melted, about 10 minutes.
  7. Optional: Serve with sour cream and salsa.

    If you don't have fajita seasoning on hand, here's a recipe for making your own: 2 teaspoons chili powder, 1 teaspoon salt,
    1 teaspoon paprika, 1 teaspoon sugar, 3/4 teaspoon crushed chicken bouillon cube, 1/2 teaspoon onion powder, 1/4 teaspoon garlic powder, 1/4 teaspoon cayenne pepper, 1/4 teaspoon cumin. Just mix them all together and keep in an airtight container.

    Very good and quick. I prefer quesadilla's done in a pan on the stovetop so I did it that way. I also used red pepper instead of green as it's sweeter. Kids loved it.

    These were pretty good the first night I made them. I had a lot of left over filling items. I mixed them together when I stored them. I think the chicken and stuff tasted way better the next day. I will be making this again, but ill make the filling the night before.
