Ingredients

  • 2 (cup) cooked chicken, shredded
  • 1 (cup) onion, chopped
  • 1 (cup) shredded mozzarella cheese
  • 1 (cup) shredded Cheddar cheese
  • 4 flour tortillas

Directions

  1. In a bowl, combine chicken, onion, mozzarella and cheddar; set aside. Spray one side of each tortilla with nonstick cooking spray. Place tortilla greased side down on hot griddle. Place chicken on half of each tortilla. Fold over and cook over low for 1-2 minutes each side.

    Add in a can of condensed cream of chicken soup and an 8oz container of light sour cream. Also add a can of diced mild jalapeno peppers. I am not a fan of olives, but you could mince some up and toss those in as well. Combine all of these and mix in with the chicken, onion, mozz & cheddar. Assemble and place in glass baking dish and bake at 350 till heated through (about 20 minutes). Cover the enchiladas with some extra cheese and enchilada sauce and bake until the cheese melts (10 more mins).

    Was in a time crunch for dinner and kid's activities. Little local grocery store was out of the shredded chicken so I substituted Chi Chi's crumbled beef. Still turned out great! Wonderful quick and delicious recipe for those times I am under a big time constraint.

    Hi Shawn! Ground beef is a great substitute for the chicken in this dish. For future reference whenever I cook up ground beef or shredded chicken, I always make an extra batch to throw in my freezer. This saves me on busy nights because I can just thaw it in the microwave or heat in a skillet with a little broth or water, and continue with the recipe as directed. You could also pick up a rotisserie chicken from your grocery store and just shred the meat or use canned chicken, found where the canned tuna is located.
