Chicken Fajita Melts

Ingredients

  • 3 (tablespoon) vegetable oil
  • 4 (6.0 ounce) boneless skinless chicken breast halves, thinly sliced
  • 1/2 (cup) sliced onions
  • 1/2 (cup) sliced red bell pepper
  • 2 (tablespoon) taco seasoning mix
  • 8 (1/2 inch thick) slices French bread
  • 2 (cup) shredded Cheddar cheese
  • 1/2 (cup) salsa (optional)

Directions

  1. Heat the oil in a large skillet over medium-high heat. Add the chicken, season with salt and pepper, and cook and stir until lightly browned, about 5 minutes.
  2. Stir in the sliced onions and red peppers, and cook and stir for 5 minutes or until the vegetables are tender. Stir in the taco seasoning, add a 1/2 cup of water and mix well. Cook mixture until the juice has thickened and the chicken is well coated with sauce, about an additional 7 minutes.
  3. Preheat the oven's broiler and set the oven rack about 6 inches from the heat source.
  4. Evenly spoon the chicken mixture on top of the salsa topped bread (if using salsa). Sprinkle each sandwich with 1/4 cup Cheddar cheese.
  5. Place sandwiches under the preheated broiler and cook for 5 minutes or until the cheese is melted and beginning to brown.
  6. Optional: Garnish with salsa.

    Another tasty meal! Made an extra couple of breasts with peppers and onions to freeze and keep on hand. Will make this again. Oh, and TOTALLY agree about the salsa in the recipe, I didn't have any on hand either!

    Bradley, great suggestion to make some extra of these to freeze and have on hand on a week you forget to meal plan! I also agree with you and Katey that some salsa, Pico de Gallo, or guacamole would be wonderful toppings for this dish.

    I edited the recipe to make salsa optional and put it in the ingredient list. If you have fresh tomatoes, onions and peppers you can mix it up and make your own salsa. If not, and you have canned tomatoes and some peppers (either green chilis, serrano or jalapeno peppers) you can make your own salsa. Also, a can of Rotel tomatoes with green chilis can be doctored up to taste like salsa...just add some heat with cayenne and hot paprika (about 1/2 teaspoon or to taste). Season your homemade salsa with salt and pepper. Here's my salsa from scratch recipe: INGREDIENTS: 2 tomatoes, diced (or 1 can diced or whole tomatoes diced up with the juice from the can) 1 garlic clove, 1 jalapeno pepper, seeded and minced, 1 teaspoon lemon or lime juice, salt and pepper (about 1/2 teaspoon salt and 1/4 teaspoon pepper). Mix it all up and let it sit for about 30 minutes for the flavors to marry.

    These were so yummy!! My entire family loved them, I cut the onions and pepper really thin so they couldn't see them. I used homemade bread and then put them in a sandwich press. Served them with black beans and corn!! Will be making these again!

    This was awesome! I was a little skeptical at first & I ended up using a full size french baguette instead of the little ones & it worked out well. I think I like these better than a regular fajita now
