Dried Hatch chilis?

Can I still use them? My husband bought some at the market when they first came in but I didn't bother using them then. Are they just going to taste the same as regular peppers now, or is there still something special about the flavor now that they're dried and red? Are they hotter?

    You can still use them. You can rehydrate them by pouring boiling water over them and let them sit for about 20 minutes. Then puree and use them in salsas or sauces. The flavor of peppers does change as they mature. However, even though they are red and LOOK hotter, they actually become sweeter. You may also crush them and use them as you would red pepper flakes.
