Clean-up-the-leftovers Sandwich Night

Last night I had a bunch of odds an ends waiting to be used, plus a nice baguette. I salted/peppered some eggplant slices and dipped them in eggwash and flour, then lightly friend them. Also sauteed some onion until tender. Warmed my baguette pieces in the panini grill for a minute, then spread with a little red sauce. On went the eggplant, onion, a little olive salad and fresh mozzarella on top. A minute under the broiler and we had really yummy sandwiches!

    Great suggestions Ksenija and Barb! Both leftover veggies and meat balls make great filling for sandwiches. I also like use leftover meatloaf topped with fresh mozzarella cheese as a sandwich filler as well as turn leftover chicken or turkey into a classic chicken salad mixture.
