Any tricks for making leftovers alive again?

    Re-purpose! I find the best ways to make leftovers pop again, is to use them for something completely different than the original dish. Examples: Old Garlic bread, stale bagels, etc. Toss in olive oil and some seasoning and bake into croutons. Leftovers meats can be great additives for soups, quesidillas or grilled cheese when chopped up. Getting creative with pasta casseroles is also another fun way to make a leftover pop again (although that can get a little repetitive itself).

    I think going into your weekly meal planning with thoughts of leftovers is a great idea. For example: I'll make the most out of a roasted chicken for me and hubby on a Sunday with mashed potatoes and veggies. The leftovers can be frozen for enchiladas or quesadillas or my favorite, chopped for chicken salad sandwiches and of course - chicken stock for soups and stews.

    I'm a leftover fiend and hate wasting money on un-eaten foodstuffs so I even mix yesterday's veggies into spaghetti sauce or on/in pizza dough. Tasty and resourceful!

    Think weekend meals. Omelets or frittatas are a great way to use up extra raw ingredients--any veg or meat you have that's not already cooked or sauced. For that matter, just think of whatever ingredients you've got on hand, decide what to either wrap them in or serve them on--i.e. tortilla, baguette, rice, quinoa, noodles--and decide on a sauce, whether it's tomato, olive oil/herbs, maybe olive oil + an acid component, or a white sauce + cheese or other add-ins.
