Does anyone have any ideas about what I can do for a no-cheese version of mac and cheese?

It's for a friend's son who's coming for dinner tonight (last-minute thing, so I hope someone sees this!) and I was hoping to be able to concoct something with what I've got on hand...

    Kendra, that's actually a pretty easy one if you happen to have cauliflower around. You can cook some of that in either water or stock (as long as know know he won't have trouble with the stock), and then puree it. If it needs thickening up to be close to a cheese sauce consistency, you can always put some heat under it and mix in a little corn starch slurry to thicken it. Then just season with a light sprinkle of garlic salt, paprika (which will give a nice orange cheesy color), and if you need, adjust the salt and add some white pepper.

    We like butter and a bullion cube, cream of broccoli, celery or chicken soup (assuming the lack of cheese it isn't a milk based allergy).
