The Better Way To Plan Meals And Save Money

We end up with a lot of left-over cornbread when we cook, esp. around new years. Any suggestions on what to do with it? I end up with a freezer full because it's too good to waste.

    I use it to make cornbread stuffing. It can be served warm or also cold. I like to make a turkey sandwich, add cranberry spread (or strawberry jelly also gives that sweet kick), add a layer of stuffing and lettuce and onions. SOOO good!

    There are a variety of things you can make using left over cornbread. Cut it into cubes and cook in the oven to make crutons for a salad. And a you could crumble it uo and use it as 'breading' for chicken, fish or even pork chops (http://www.foodonthetable.com/recipes/233674-cornbread-coated-pork-chops)

    All good advice! I love it for croutons, too, but I toss them in a little oil oil, and then season and saute them, and when they're done I sprinkle them with a little grated cheese and let them cool.

    You can dry it completely out and use it as you would bread crumbs. I always keep stale bread (all sorts) for this. If it's completely dried out you can keep it in a ziplock bag and it's there when you need it!
