    I like the avocado and shrimp salad on here. was soooooo good. I also make homemade gazpacho soup. I love ceviche at restaurants but would never even dream of trying that at home.

    I love salads of all kinds. This is my favorite. Grilled Chicken , summer fruit salad:
    grilled chicken
    strawberries, blueberries, blackberries
    Bibb lettuce
    Pecans (toasted in skillet)
    A sweet vinagrette dressing
    Pepper/Salt

    I don't add cheese to mine but I'm sure you could. This is always beauty of a presentation. Cheers!

    With the Texas heat in the summer, I love anything cool and crisp! Like Julianna, I usually go for grilled chicken, berry and pecan salads. But I add feta cheese. My favorite dressing to use is Girards White Balsamic.

    I'm a fan of buying Whole Foods salads. They are loaded with "stuff" like blue cheese, blueberries, pecans. It is too much for the little bit of lettuce they give, so I buy a bad of spinach and mix the plain bag of spinach with the whole foods salad and add a balsamic dressing. It is still packed with "stuff" but serves many more people. (quick too!)

    I love fruit pizza for dessert. You can put sugar cookie dough on the bottom or you can try something I've been doing to cut down on sugar and white flour - I made a shortbread cookie recipe using wheat flour, real butter (say no to margarine!) and less white sugar. The fruit on top provides most of the sweet and it is DIVINE.

    Something I had a Cantina Laredo (mexican restaurant) last week was great too. Grilled fajita style chicken, black beans, lots of cilantro on top of a bed of lettuce. Finish with a oil based salad dressing and squeeze a lot of fresh lime. Another point to note is that I had a "Skinny Margarita" there - only 95 calories. It was fresh lime and lemon juice, agave nectar (natural sugar), tequila and a splash of club soda. divine and low cal!!

    I love good salad in the summer. Simple spinach leaves and red lettuce with cucumber and tomato with cilantro, lemon pepper and parmesan cheese sprinkled on top.

    steak salad! lettuce/spinach/etc topped with steak, tomatoes, cucumbers, grated parm...you can really add anything you want...soooo good :)

    I just love a cool salad of black olives, baby tomatoes, a can of marinated mushrooms with the JUICE added and just chill , love it, then the tomato and cucumber salad with miracle whip and chill, also the good ole shredded carrots with raisons and you can add walnuts with miracle whip, and also a favorite that I stole from the grocery store, too expensive, so I made it myself, its broccoli spouts, sunflower seeds, raisons, apple chunks, and coleslaw and coleslaw dressing, DELICIOUS !! JUST CHILL AND EAT HA ENJOY !

    My mom also had a GREAT COOL dessert that you will LOVE!!! My mom was a chef and made EVERYTHING from scratch, lol and this is a yellow cake, make from the directions and cool , then get LIME JELLO and make it and then poke holes all in the cake on top and pour the jello over the cake and then chill, eat the next day with a dollop of fat-free whipped cream, so MOIST !

    My mom made the BEST FRUIT salad with a TWIST !
    2 bananas
    1/2 glass of those cherries, (optional)
    2 small cans of the manderan oranges
    1 cup marshmellow
    1 cup walnuts
    2 apples, cut up in chunks
    and 1 cup cooked rice (thats the twist) you can also substitute those tiny tiny cooked round pasta with little holes in them, don't know the name, someone made it with that and it tasted like the consistancy of tapioca if you like that instead, and you pour sugar over the rice to sweeten it, not sure how much

    Mix everything together except the marshmellow last with the whipped cream , fold those in and CHILL , OH MY GOODNESS SO GOOD !!!!
