Got home from the store today with two very hungry little ones and didn't want them looking for snacks... So I pulled out the panini press, grabbed a chicken breast from the package I just bought, along with some mayo and bread crumbs. While the press heated, I cubed and seasoned the chicken, gave it a quick roll in the mayo (it was just enough for a light coating, like an egg wash), and then coated with the breadcrumbs. A quick spray of olive oil on the press, the pieces went down, another quick spray on top... Two minutes on each side and I had beautiful little chicken nuggets--done perfectly! Crunchy on the outside from the hot press, but still moist from the mayo. They both loved them!

    Well, mine like baked fries, but of course, they take longer. For quick sides, lots of times we'll do carrots either cut into ovals and sauteed with a little butter, ginger and brown sugar--doesn't take long at all. They also both love sweet potatoes, so that's something quick to toss in the microwave and then add a bit of butter and seasoning at the end. They both love rice with a little something extra in it, too, so I usually have rice pre-made in the refrigerator, and then I can toss in whatever veggie leftovers I have on hand. With a little Bragg's Liquid Aminos sprinkled on top before serving, it looks like takeout veggie-friend rice, so they're happy--and the Bragg's tastes pretty much like soy sauce. ;-) It's good for them, too, and then I don't use any regular salt in the dish.
