Six-minute chicken nuggets!
FollowGot home from the store today with two very hungry little ones and didn't want them looking for snacks... So I pulled out the panini press, grabbed a chicken breast from the package I just bought, along with some mayo and bread crumbs. While the press heated, I cubed and seasoned the chicken, gave it a quick roll in the mayo (it was just enough for a light coating, like an egg wash), and then coated with the breadcrumbs. A quick spray of olive oil on the press, the pieces went down, another quick spray on top... Two minutes on each side and I had beautiful little chicken nuggets--done perfectly! Crunchy on the outside from the hot press, but still moist from the mayo. They both loved them!
