The Better Way To Plan Meals And Save Money

I know we've got a lot of vegetarians here, anyway, but does anyone else do Meatless Mondays? It's part of a Johns Hopkins initiative to get people to make healthier choices for themselves and the planet.     Nope I go thru withdrawl if made to eat anything but red meat for dinner lol. Although I do love any veggie meal for lunch =)

    We do meatless Mondays, usually an asian tofu stirfry or a fresh veggie satue pasta dish, sometimes its a quiche. I wish I could convert my bbq loving husband.

    I know.... same here! I'm fine with meat once in a while, but my husband would like it seven nights a week if he could... Quiche is always a nice alternative, though, too, especially with a good salad.

    We do. My sister-in-law is vegetarian and we usually get together for dinner once a week, so those are our Meatless Mondays.

    not on MOndays per se, but we do have at least one all veggie meal a month, I don't think I'd get away with once a week until winter...then i do black bean chili once a week. I love the idea though!!! I'm thinking maybe I could try a taco salad with soy crumbles..that may work.

    We do! We have creamed soup and cheese sandwiches every Monday. Kind of makes a nice break for the palate ^_^

    Speaking of which , I'm planning on making a cauliflower soup. What else would you serve with that? I'm trying to keep it light this week and I'd rather not do anything with eggs because of my cholesterol.

    Linda, sounds like a good idea! To make more of a meal out of your soup, why not serve it with a fresh green salad, crusty whole wheat bread or crackers, a side of fresh vegetables (carrots, celery, bell peppers, broccoli) with salad dressing or hummus for dipping, or tomato bruschetta.

    I love cauliflower soup! @Linda, what did you end up making with it? (It's a favorite of ours at a local Italian restaurant and when they have it, sometimes I'll just get that and a salad with tomato, mozz and basil for lunch.

    I'm do a meatless dish at least once a week. But, my husband is so funny, he keeps commenting on the dish. Then he'll say :It'd be better with meat in it"

    Funny, but with my twins, one always wants meat, and the other sometimes does but will still say he doesn't want to eat animals... (they're only seven).
