The Better Way To Plan Meals And Save Money

Packing vegetarian lunches for kids?

My kids still pack their lunches, even though 1 is in HS and 1 is in middle school. I try to make vegatarian lunches but they're just not as tasty after sitting for a few hours.

Anyone make lunches like this and are they any good later?

    What kind of lunches do you make? We do lots of PB&J, sometimes we put veg. soup in thermos. That all works fine, we haven't tried anything exotic (yet).

    We started w/this article at http://www.peta.org/living/parenting/vegan-lunch-pack.aspx and this one http://www.wikihow.com/Pack-Vegetarian-School-Lunches and went from there.

    However, we've had to modify things a bit since one of our daughters needs to be GF (no duh :) )

    We went through a period where we ate a lot of pita bread + hummus + tabouli ; just packed them all separately and the kids put it together @ lunch

    We use a thermos and pack soups - it helps us also with her allergies

    This blog post has one of my favorite vegetarian recipes ever, and I was lucky enough to learn about it when a friend made a big batch and dropped a huge bowl off at our house one night. (Lucky us!) The stuff is delicious and stays nice and fresh in a thermos. Great lunch, paired with some fruit and maybe some blue corn chips or something else crunchy.

    Also, wraps are really great, and I always think they wind up tasting even better after a few hours, once any juices come out of the veggies and mix with the wrap and any dressing you might use.

    What about hard boiled eggs? I've been leaving a bowl of them in the fridge for rushed teenagers to grab in the morning, it seems to be popular. You could put some seasoning in a baggie to dip them in.

    Ditto on the hard-boiled eggs. We take them all the time, but I never thought to make little flavor packets for them. Great idea.
