Getting vegetables ready to cook?

Is it okay to chop vegetables ahead of time for the week's recipes even if I don't want to cook the meals ahead of time? Is there anything special I would need to do to keep them fresh once they're peeled and chopped?

    most will be ok. i wouldn't chop cucumbers or mushrooms ahead of time. keep them in baggies & use within a few days.

    Definitely, for some. When I dice onions, I always do more than I need and keep them in a zip-lock bag. Same for carrots and celery, especially if I know I'm going to be doing a roast or anything else that starts with sauteeing carrots, onion and celery. I'd rather just do the chopping once, you know?

    I also like to have little containers of red pepper and red onions handy so it's easy to throw together a salad really quickly. (Hard-boiled eggs, too, especially because one of my sons likes them so much.) One thing, though--if you're going to pre-cut veggies like carrots, red peppers, red onions, definitely keep them separate so their colors don't bleed and stain the other veggies. I also tend to clean and cut carrot sticks for my kids, but I keep those in a small container with some cold water so they don't dry out. Another hint: if your kids shy away from eating red onions, you can soak them in some ice water for a little while before serving them raw to make them less pungent.
