I rad that much of Italian cuisine used to be non-meat based, but most of what I see is heavy sauces + meat. Other than anti-pasta, (too little for a meal), where can I start?
Replacing some of the noodles with eggplant. Please dont think badly of meats. A good place to start for Real Italian is the real Italian cooks. David Roco and Jamie Oliver (hes not all Italian). Real Italian food is not the same as here in the USA. Its actually so much better! Just the flavors will make you feel like you just got blown away! Enjoy!
I agree with Sandy; in Italy, the sauces are used much more sparingly, as Mario Batali says, more as a condiment, not to drown the pasta in them. One of my favorite dishes in one of Batali's restaurants was a pumpkin-stuffed ravioli (really very light) drizzled with a brown sage butter. You could just as easily do the same thing with olive oil instead of butter and have a very light dish.
Don't forget about polenta, either. You could easily do polenta or risotto with a vegetable stock instead of chicken stock, and maybe have it with some grilled fennel (so good!) and roasted vegetables or a salad.
