I'm having the fam in town. Typical Hispanic family, we will for sure have queso and plenty of chips. (I buy chips storebought and my aunt makes homeade flour tortillas, yum). The queso I make is good but boring. Just microwaved velveeta and ro-tel. Does anyone have an alternate queso recipe?

I'm making the taco soup from here and I highly recommend that.

Add a couple of spoonfuls of sour cream, a fresh chopped serrano pepper (minus the seeds) with a half cup of cheddar cheese added will liven your queso up and make it creamy as well.

This is the queso recipe I always make:

    1 lb. American cheese, cubed
    1 lb. Velveeta cheese. cubed
    3-4 T. oil
    3 large onions, diced
2 small cans green chilies, chopped
    Chopped jalapenos to taste
    1 large jar pimento, chopped
6 oz. can evaporated milk (or to desired consistency)
