Good Turkey Leftover Recipes?

I'm looking for a good resource for how to use turkey leftovers. Last year I used the leftover turkey for sandwiches and used the turkey carcass to make turkey & rice soup. The pot was barely big enough for such a big carcass! I feel like those two things aren't very adventurous. Does anyone have suggestions for something a little more interesting?

    Turkey a la King, turkey pot pie, etc. Pick any pork or chicken recipe, and you can probably make it with turkey instead. ;-)

    Russian variation, if you like potato salad : boil 3 red potatoes, 3 eggs and 2 carrots. Dice when cooled; Add 2 big diced pickles, a little bit of onion, diced; leftover turkey , diced; Add a can of peas ( discard the liquid ) or 1/2 a pack of frozen peas ; 2 tablespoon of Mayo of your choice , salt and pepper. Salad can be eaten as main course.

    Whatever I can make with chicken I make with turkey. Enchiladas (in red or green sauce), turkey tetrezini, alfredo. There are so many combinations. Growing up one of my favorites was an open face sandwich on white toast with gravy poured over. Now we even smoke turkey with that I will use it in split pea soup and seriously just about anything. I will also portion out the leftover meats to use for quick dinners at a later time so my family doesn't get burned out. When I make soup from the carcass I cut it into pieces to better fit the pot and put 2 carcasses in one big pot.
