Is there a fun variation on chicken nuggets? Pizza? Something that is healthy that the kids won't see?

    Hi Kara, In the kid friendly section there are some great ideas under "new favorite recipe". I also have a recipe for healthy chicken nuggets. Here goes....1 1/2 pounds boneless, skinless chicken thighs/1 c cornflakes/1 tsp paprika/1/2 tsp Italian herb seasoning/1/4 tsp garlic powder/1/4 tsp onion powder. Remove skin, bones and cut the chicken into bite size pieces. Put cornflakes in a ziplock bag and crunch them up (I use back of spoon). Add all spices to the cornflake mix. Shake. Add small bits of the chicken to the bag and shake to coat. Cook on a cookie sheet at 400 for 15 minutes. I spray on light olive oil. Much more healthy than fast food ones!

    I make my own chicken nuggets and fish sticks (though they are more like fish chunks!) I will make a ton on a Sunday afternoon and freeze them. They last for about 4 months in freezer (but we eat them before). Here is how: I will cut chicken breasts into nuggets with kitchen scissors. I put 2 c french fried onions rings, 2 T flour into bag and crush. Dip chicken in egg and shake in bag. I then freeze the chicken in bags. I will grab a few bags out of freezer during week to defrost. Cook at 400 for 20 min. If can't defrost cook for 30 min. I"ve also coated with corn flakes, or crushed tortilla chips. (Same as above for fish).

    And it works best if you make sure to have the freezer bags be very flat. I will lay the nuggets to touch flat in freezer bag and place on stacked cookie sheets for original freeze.

    I've made something similar for fish "chunks" LOL. I used 1 T flour and some shredded coconut. This is so good with fish and reminds me of coconut shrimp. The fish I used was cod.

    I love the idea of the 'fish chunks' done with some shredded coconut! I've always loved coconut shrimp, but hardly ever make them except to take along someplace for holidays. I'll have to try the coconut fish with my guys!

    "deceptively delicious" cookbook had an awesome idea of mixing a vegetable puree with egg for the wash. My kids love sweet potato!
