What do I do with chicken gizzards?

I've been wondering, whenever I roast chicken. Should I be saving the innards and heart that come packed inside the chicken? Is there something I could use them for?

    Save them up in your freezer until you have enough for a whole meal. The hearts cook pretty quickly but gizzards need to be simmered a bit. They could be sauteed and served over some nice salad greens with a mustard/vinegar dressing, or chopped and mixed into a pate--all kinds of things. Of course, you could always just use them in stock (but leave out the liver). Then again, you could always do why my mom did: feed them to the cat!
