One example is to make a simple marinade of Italian dressing for chicken or beef. Take the packet of Italian dressing and add 1/3 c. each oil and dry white wine and 2 tbsp. lemon juice. Put marinade and meat in Ziploc plastic bag and place in refrigerator for a couple of hours. Take meat out of the bag and grill.</p> <h2>Easy Summer Meals</h2> <p>Salads, cold soups, cold bean salads are healthy meal ideas. Buy a rotisserie chicken and have it one night for the dinner. Then use the leftover chicken to make a salad with for the next day. Extra-virgin olive oil<br /> 1 seedless cucumber, cut into ¼ inch diced pieces<br /> 1 small yellow bell pepper, seeded and cut into ¼ inch pieces<br /> 1 small onion, cut onto ¼ inch pieces<br /> 2 medium cloves, minced<br /> 1 small jalapeno pepper, seeded and minced (optional)<br /> 2 tbsp. sherry vinegar<br /> 2 tbsp. chopped fresh cilantro, parsley or basil<br /> Salt and freshly ground pepper</p> <p>Process ½ c. of tomatoes, along with the water and oil, in a blender or food processor until pureed. Transfer to a medium bowl, along with the remaining ingredients. Season with salt and pepper to taste. Refrigerate until ready to be served. (Can be made several hours before serving.) Also, this is good to bring on a picnic lunch.</p> <h2>Oriental Salad</h2> <p>1 head of lettuce, shredded<br /> 2 bunches green onion, chopped<br /> 2 chicken breast, chopped (boneless, skinless)<br /> 1 small can chow mein noodles<br /> ½ c. almonds, slivered<br /> Dressing:<br /> 4 tbsp. sugar<br /> 2 tsp. Accent seasoning<br /> ½ c. oil<br /> 2 tsp. salt<br /> ½ tsp. sugar<br /> 4 tbsp. vinegar</p> <p>Mix dressing the day before and refrigerate, stirring occasionally. Do not put chow mein noodles, almonds, or dressing on the salad until ready to serve. This is a nice dish to take to a potluck or to serve at a party.</p> <p>The nice weather brings along thoughts of going on a picnic. Some summer meal ideas are to pack a loaf of French bread, some cheese, grapes, and a nice bottle of wine in a picnic basket. Bring along a blanket to sit on.
