The weather is warming up and that means we will get to fire up the grill! Grilling is one of my favorite cooking methods because it is so fast and easy. Almost anything goes on the grill – protein, vegetables and fruits. I have to admit I am a little lazy because I have a gas grill, but it sure is more convenient. (Charcoal purists please cover your ears)
Here’s what I have planned for the week:
- Monday: Tomato Topped Sole with rice
I’ve been trying to incorporate more fish into our diet, so I hope this will be a hit.
- Tuesday: Soy and Garlic Rib Eye Steaks with asparagus and baked potatoes
Rib eyes are on sale, and plus we only need about 4 oz each. I’m going to save the leftovers for fajitas later in the week.
- Wednesday: Sausage n Spinach Pockets with cucumber and tomato salad
These looked fun for a handheld dinner. Perfect for on the go. I actually think they might work for breakfast too.
- Thursday: Pecan Crusted Chicken Breasts with shredded sautéed zucchini and corn on the cob
This dish is a huge hit at my house because it is a healthier version of fried chicken. Corn is coming in season. I just throw it in the microwave and it’s done in minutes.
- Friday: Beef Fajitas
I’ll cut up the ribeye from Tuesday and sauté some peppers for a fajita bar.
- Saturday: Hot Dog Night

- Sunday: Chicken Spaghetti with green salad and Italian dressing
This casserole is comfort food at its best, complete with can of mushroom soup. I’ll make this earlier in the day and just pop it in the oven.
