We had a very fun holiday weekend filled with laughs and good food. So much food in fact, that we’ll be working on the leftovers for the first part of the week! I don’t have to worry about wrapping gifts this week, so I’m looking forward to spending some quality time with family before the new year begins.
- Monday: Chicken Enchilada Leftovers with salad and Mexican rice
In my experience, chicken enchilada casserole tastes almost better the second time you have it. This Christmas Eve favorite will be polished off tonight. - Tuesday: Beef Tenderloin Sandwiches with roasted brussel sprouts
We made beef tenderloin for Christmas dinner and couldn’t eat all of it, so I’m going to use the last of the leftovers for dinner on Tuesday night. I insist roasted brussel sprouts taste like popcorn, but some in my family disagree. - Wednesday: Spiral Ham with sweet potatoes and spinach salad
My aunt sent us a big ham for Christmas, so we’ll dive in this week. - Thursday: Deviled Chicken Breasts with roasted broccoli
- Friday: Red Chile Posole with tortillas
I’ll make extra so we’ll have some for lunch next week. - Saturday: New Years Eve
Some friends are having a casual family gathering so we’ll welcome the New Year together. - Sunday: Pizza Night
We’ll have a lazy day watching football and movies. We’ll continue the laziness by ordering pizza!
