One of my favorite, and incredibly easy, go-to meals for the fall is a simple chicken and noodles. Not only is it incredibly easy but it is less than 30 minutes from refrigerator to the table if you have cooked chicken on hand (or, let’s say several pounds of turkey).

With Thanksgiving just around the corner this is a great recipe to keep on hand for the days following. It is simply chicken broth, chicken and egg noodles. Three ingredients, that’s it! Okay, it sometimes can use a little salt. So maybe four. At any rate. If you find yourself with a bit of leftover turkey simply subsitute for chicken and you will have a great dinner with little fuss! I love mine served over mashed potatoes so all the better if you have leftover mashed potatoes as well!

Ingredients:

  • 1 pound chicken or turkey, cooked and diced
  • 31 ounces chicken broth
  • 8 ounces wide egg noodles
  • to taste salt

Directions:

Pour chicken broth into a large saucepan and bring to a boil. Once boiling, add egg noodles and chicken. Cook until egg noodles have absorbed most of the liquid. Serve, over mashed potatoes preferably.

Cooks Notes:

If you would like to make your own chicken or turkey stock after a holiday like Thanksgiving, you can easily do so. Simply pull the remainder of the meat from the bone, or at least what you can get to. Place the rest of the carcass in a large stock pot and cover with water. Boil for several hours and excess meat has fallen off the bones. Sift the liquid making sure to remove excess fat and bones. You now have chicken or turkey stock! Free! :)
