One of my favorite, and incredibly easy, go-to meals for the fall is a simple chicken and noodles. Not only is it incredibly easy but it is less than 30 minutes from refrigerator to the table if you have cooked chicken on hand (or, let’s say several pounds of turkey).
With Thanksgiving just around the corner this is a great recipe to keep on hand for the days following. It is simply chicken broth, chicken and egg noodles. Three ingredients, that’s it! Okay, it sometimes can use a little salt. So maybe four. At any rate. If you find yourself with a bit of leftover turkey simply subsitute for chicken and you will have a great dinner with little fuss! I love mine served over mashed potatoes so all the better if you have leftover mashed potatoes as well!

Ingredients:
- 1 pound chicken or turkey, cooked and diced
- 31 ounces chicken broth
- 8 ounces wide egg noodles
- to taste salt
Directions:
Pour chicken broth into a large saucepan and bring to a boil. Once boiling, add egg noodles and chicken. Cook until egg noodles have absorbed most of the liquid. Serve, over mashed potatoes preferably.
Cooks Notes:
If you would like to make your own chicken or turkey stock after a holiday like Thanksgiving, you can easily do so. Simply pull the remainder of the meat from the bone, or at least what you can get to. Place the rest of the carcass in a large stock pot and cover with water. Boil for several hours and excess meat has fallen off the bones. Sift the liquid making sure to remove excess fat and bones. You now have chicken or turkey stock! Free!

Wow, this recipe is easy-peasy, and looks delicious! I’m not sure about serving it with mashed potatoes though. Wouldn’t that be too much starch in the same meal?
That looks like a simple recipe. Our house rarely has leftovers past the first round of turkey sandwiches though.

This is my kids’ Tuesday night favorite from our Sunday roasted chicken. Mine too, ESPECIALLY on the rare occasion there are mashed potatoes left too. Ultimate comfort food! Yum!

Tricia’s recipes are easy and most always what I would consider a ‘comfort’ food. I always have chicken or turkey broth on hand in the freezer. Happy Thankgsiving to all you Women out there who work so hard to take care of others!

This recipe is easy and delicious. I sometimes prepare the same sort of recipe and stir in some sour cream or some undiluted cream of (whatever you want) soup to add a bit more richness.

OK, it is so simple that it is genius! I have this on hand right now, of course! Thanks, great deal too as far as budget goes. I might add a little rosemary or oregano to mine..even a small sprinkle of parmesan would be nice. Not to complicate it, but since they are also staples! Thanks for the giveaway too!

I like to sub pearl barley sometimes. If your making a lot of soup the barley soaks up the flavor of the broth nicely and holds up very well as I’m always got more than enough soup for 2 or 3 meals.

I use the turkey carcass every year to make a HUGE batch of turkey noodle & vegetable soup and freeze it. I love having it there to thaw out & warm up later on a cold wintry day! Yum! It freezes wonderfully!!
