As the weather turns chilly and the days are shorter, it’s so nice to walk in the door and smell a warm meal. The slow cooker becomes my best friend because I can start cooking in the morning, leave it all day, and expect dinner to be ready when I come home.
I found an excellent post on the basics of slow cooking on BlogHer by Kalyn Denny. If you are new to the world of slow cooking, she offers important information including:
- Safety
- Size of crockpot
- Temperature
- Appropriate food choices
In fact, Stephanie O’Dea loved her crockpot so much, she began a blog called A Year Of Slow Cooking which includes a crockpot recipe for every day of the year!
This fall, I can’t wait to make a few of my favorites:
BBQ Pork: This recipe from the Happy Housewife is incredibly simple because it has only three ingredients. You can serve it alone, make BBQ pork sandwiches, use it as a pizza topping, and more. The options are endless.
Roast Chicken: I like buying whole chickens because they are less expensive than particular cuts. Plus, you have the benefit of a variety of white and dark meet. However, like The Wicked Noodle, I was skeptical about a roasting a chicken in a slow cooker. In this recipe, she creates a roast chicken with a delightful flavor and texture.
Shredded Beef: This isn’t a meal in itself, but is very versatile. You can use this to fill enchiladas, tacos, and burritos. As a matter of fact, we had a “Make Your Own Burrito” night where everyone used the beef as a base, then added rice, beans, cheese, and salsa to their liking. It was a like our very own Chipotle in our kitchen.

Thanks for posting this. I just started doing Crock Pot cooking and can’t wait to try some of these recipes!
I love my crockpot. I have used it to bake potatoes, make soups & chilis, roast chicken, and all sorts of other sanity-saving recipes.
My crockpot is my best friend. Pathetic yes but so true.

I use a lot of Stephanie’s recipes from A Year of Slow Cooking. They’re all gluten-free, and they’re usually very simple. We’ve probably tried 25 so far and have only had one that the kids didn’t like!
