You’ve probably heard about all the health benefits of kale, but you may be unsure of how to incorporate it into a meal.  This soup helps introduce kale to your family in a flavorful and inexpensive way.  We found both kale and sausage on sale at our store for a total of $4.82.  That’s a great deal for healthy and hearty!

Kale and Potato Soup

INGREDIENTS

Servings:  4

2 medium potatoes ($0.88)
2 tbsp vegetable oil  ($0.12)
5 cups water
1 tsp salt ($0.02)
1/2 tsp pepper ($0.02)
1 bushel kale ($1.99)
1/2 lb sausage ($1.79)

DIRECTIONS

Peel and chop potatoes. Combine with vegetable oil and water. Cook for 20 to 30 minutes or until potatoes are tender. Remove potatoes and reserve liquid.

Mash potatoes through a sieve and return to potato liquid. Add salt and pepper and simmer for 20 minutes.

Wash kale discarding all tough leaves and cut into shreds. Add to potatoes and cook for 25 minutes. Add sausage. Simmer gently for 5 minutes.
